Chicken

Sticky Chicken Wings

Ingredients:
20 chicken wings (remove tips of the wings)

Sauce:
150 ml Tomato sauce
60 ml Worcestershire sauce
60 ml Vinegar
60 ml Olive oil
1 Fresh chilli
1 Green pepper
10 Sprigs spring onion
1 Garlic clove
Salt and pepper to taste

Directions:
Liquidise sauce ingredients
Place chicken wings into sauce and leave to marinade for 45 minutes
Grill wings until crisp on medium heat while basting with sauce
Remaining sauce is an ideal dip for the wings

Superb Chicken Salad

Ingredients:
300g Deboned skinless chicken breasts
Barbeque spice

Cooking Sauce:
2 tbsp of lemon juice
1 tsp Tabasco sauce
2 tbsp Olive oil
2 tsp BBQ mix

Directions:
Open chicken breasts and flatten with tenderising hammer
Mix all ingredients for sauce
Season chicken breasts with sauce whilst grilling
Slice chicken into strips and add to your favourite garden salad

(Tip: Brush or spray olive oil onto grid to avoid sticking)

Lemon & Herb Chicken

Ingredients:
2 Whole chickens
2 Whole onions
125 ml Olive oil
100 ml Lemon juice
3 tsp Parsley
1 tsp Mixed herbs
Salt and Pepper to taste

Directions:
Cut lemons into quarters and place inside the chickens
Place chickens on rottisserie spike and secure with prongs
Tie legs and wings with string
Place chickens on BBQ on med - low heat
Mix all other ingredients and brush onto chickens while cooking
Chickens will take approx. 1 hour 45 minutes without convector hood or 1 hour with convector hood

Remember:
Fill drip trays with water while cooking
